Satisfying Cheesy Chili (vegan, gluten free)

Ingredients:
1 can (16oz) of black beans*, drained and rinsed
1 can (16oz) of pinto beans*, drained and rinsed
1 can (28oz) of tomatoes
1 cup broth or water
1 large carrot, chopped
2 celery stalks, chopped
1 small onion, diced
1 garlic clove, minced
2 tablespoons avocado oil (or your favorite oil)
2 tablespoons Cashew Cheesy Sauce + more for topping
1-2 tablespoons chili powder
1 teaspoon sea salt
Avocado and scallions for topping

Instructions:

In a large pot heat oil over medium heat. Add carrot, celery and onion and cook until tender, about 8-10 minutes. Add garlic and spices and cook for about a minute until fragrant. Add beans, tomatoes, Cashew Cheesy Sauce and water or broth. Bring to a boil and simmer for 30 minutes.

Top with lots of Cashew Cheesy Sauce, avocado and scallions!

*Can sub 2lbs clean protein of choice for Paleo/Whole30/Keto
