Mexi Mac + Cashew Cheese (vegan, gluten-free, plant-based)

mexican style macaroni and cheese vegan plant-based gluten free

What You Need:
1 box (8 oz) gluten free pasta
1 teaspoon coconut oil, ghee, or avocado oil
1/2 red bell pepper, diced
1 jar Spicy Chipotle Cashew Cheesy Sauce
1 cup black beans, drained and rinsed

Optional Topping: chopped cilantro, green onions or chives

Cook pasta according to package directions. While pasta is cooking, add oil to a small skillet and when warm, add bell pepper. Cook for 2-4 minutes or until tender. Add cooked, strained, and rinsed pasta back into pot. Stir in cooked bell pepper, Chipotle Cashew Cheesy Sauce, and black beans. Top if desired. Serve warm.
