What You Need:
2 medium onions, thinly sliced
1 tablespoon avocado oil or healthy oil of choice
1 teaspoon sea salt
1 teaspoon balsamic vinegar, optional
1/2 cup cashew cream*
1/2 cup Cashew Cheesy Sauce
Fresh veggies for dipping (carrot sticks, sugar snap peas, radishes, bell pepper slices)
Heat the oil in a non-stick skillet over medium heat. Add the sliced onions and sprinkle with sea salt. Cook onions over medium-low heat for 30-35 minutes until onions are a deep golden brown, stirring occasionally. When onions are done, stir in balsamic vinegar, if desired, and remove onions from pan. Let cool.
When onions are cool enough to handle, chop them into small pieces. In a bowl stir together caramelized onions, cashew cream, and Chipotle Cashew Cheesy Sauce. Serve dip with fresh veggies.
*Cashew Cream: Soak 1 cup of cashews in water for 2 hours. Drain and rinse cashews thoroughly. Blend cashews in a food processor with 3/4 cup water until very smooth. Thin out with more water, if needed, until desired consistency is reached.Servings: 14 servings (2 tablespoons each)
