Ingredients:
8 cups mixed greens
1 cup halved grape tomatoes
1 cup canned corn kernels, drained and rinsed
1 cup roasted chickpeas or protein of choice tossed in Rich & Smoky Cashew Cheesy Sauce
2/3 cup thinly sliced red onion
1 avocado, thinly sliced
2/3 cup Rich & Smoky Cashew Cheesy Sauce
Directions:
Top mixed greens with tomatoes, corn, chickpeas, red onion slices, and avocado slices. Drizzle with Rich & Smoky Cashew Cheesy Sauce. Toss gently to combine. Divide evenly between four plates or bowls.
